Chicken Yakiniku

Yakiniku is the Japanese term for grilled meat or Japanese Barbecue. Bite-sized meat is marinated in Yakiniku sauce which is composed of Japanese soy sauce, mirin, sake, lime juice and a little sugar. Thin slices of ginger and sesame seeds are added for flavor. Yakiniku sauce is also available in your local Asian stores and supermarkets.
  • 5 pcs. Chicken thigh fillet
  • 4-5 tbsp Yakiniku Sauce
  • 1 tsp ginger (thinly sliced)
  • 2 tbsp olive oil
  • 1 small carrot (thinly sliced)
  • 4-5 pcs. string beans (cut into thin pieces)
  • 1/4 cup water
  • 1/2 tsp sesame seeds
  • Salt and Pepper
How to:
  • Marinate chicken thighs in Yakiniku sauce and sesame seeds over night or at least for about an hour.
  • Heat a skillet and place marinated chicken. Add 1/4 cup water and simmer until cooked. Set aside.
  • In a separate pan, heat up olive oil stir- fry ginger and cooked chicken.
  • Add carrots and string beans, stir until vegetables are half-cooked.
  • Add remaining sauce and simmer until sauce is reduced.
  • Salt and pepper to taste.
Note: After marinating you can also grill the chicken or fry it straight on the pan. As for me, I prefer to boil it first before frying.

Battling Eating Disorder

Having eating disorder problems is one of my main concerns as a person. I was very thin when I was a teenager. People thought that I wasn't eating a lot, or maybe for some, I may be undergoing a type of eating disorder. To clear things, it just so happen that part of our family genes is to have a slim body at a very young age. For both boys and girls, there's a certain age when our body's metabolism will eventually hit it real slow. When I reached my 20's I started gaining weight. One can tell if a person is healthy or not even with a slim body. On television, I often watch talk shows that helps young girls get through a stage where they thought their bodies are too thin or mostly, when girls think they need to lose some more but actually, looking at them, they don't need weight loss.

There are different kinds of eating disorder, 2 of the most famous are being Bulimic and Anorexic. 
To define:
Bulimia is known as an eating disorder that is often associated with feelings of guilt and self-condemnation. The person prevents weight gain, such as self-induced vomiting, use of laxatives, or fasting. At this stage, a person needs a Bulimia Treatment and Treatment For Bulimia Nervosa.

Amazing Beef Stew

Aside from following the Ghost Adventures guys on their weekly paranormal adventure, I am also an avid viewer of Aaron's Vlog on YouTube. Aaron's Vlog is a set of behind the scene videos, moments which are not seen on the regular Ghost Adventures show. One of the things I enjoy about Aaron's Vlog are their food adventures and discoveries. I particularly love watching this video below over and over again. Makes me wanna go to England just to try this featured delicious Beef Stew.

FTF: Menudo Extravaganza


To start, I would like to apologize if I wasn't able to return comments from last week's FTF. It's been a busy week since my son started his regular classes 2 weeks ago. There's been a lot of changes in terms of schedule and of course, personally, I'm on my first trimester and it's been pretty hectic for me too. I really appreciate the visits, and hoepefully I can visit you back as soon as possible.

For my FTF entry this week, I prepared a favorite dish of mine. MENUDO. The real menudo that I truly adore is the Menudo of my grandmother. There's something about her Menudo that no other menudo dish can top it (well, that's for me, because I am her #1 fan in the kitchen).
Menudo is originally a Mexican dish. Through the years, we Filipinos were able to concoct something to make it our own. If you're going to do some research, Filipino Menudo is far different from the rest. We love serving it with hot rice and is consider as a main dish in parties and gatherings. Crispy Kangkong

Kangkong also known as swamp cabbage is a green leafy vegetable that grows in water or in any moist soil. 

Crispy Kangkong is one of our favorite Filipino appetizers. It is healthy and it's easy to prepare. In choosing Kangkong, make sure that the bunch you're purchasing are the native ones with large Kangkong leaves. As for my choice of Kangkong, I added some small Kangkong stems to give it a little more crunch.

  • 1 bunch or 1 tali of Kangkong leaves removed and washed well then dry.
  • 1 beaten egg
  • 1 cup cold water
  • 1/2 cup all purpose flour
  • 1 1/2 cup corn starch
  • cooking oil for deep frying
  • salt and pepper
How to:
  • In a bowl, prepare batter by mixing the following: cornstarch, flour, salt and pepper, cold water then beaten egg.
  • Mix batter until smooth.
  • In a sauce pan, heat oil for frying.
  • When oil is all hot, dip each Kangkong leaf in batter then deep fry for 20-30 seconds until cooked.
  • Set aside in a serving plate.
* never overcrowd a pan especially when deep frying for easy cooking.
Tartar Sauce Recipe:
  • 1/2 cup mayonnaise
  • 1 tsp pickle relish
  • 1/2 tsp minced onion or garlic
  • 1/2 tsp lemon juice
  • salt to taste

FTF: Cravings From S&R


So everytime we shop in S&R we never fail to have a snack before going shopping. It's common for most to  eat after going shopping. But since, S&R's goods are so inviting, we stuff ourselves first before doing our grocery. Well, it gives us more energy and by the time we're done, we don't need to wait in line all famished. Now that I'm at my first trimester, my taste buds wants to try everything. I love their garlic & shrimp pizza, combo pizza (which is their "everything on it" pizza) and some french fries with mayo and ketchup.

Shrimp Curry With Spinach

  • Shrimps or Prawns
  • 1 tsp yellow curry
  • 2 tbsp olive oil
  • 5 cloves garlic (minced)
  • 1/2 tsp ginger (minced)
  • 1 medium onion (chopped)
  • 1 bunch Spinach (washed)
  • 1/2 cup fresh milk
 How To:
  • In a pan, saute garlic in olive oil until light brown.
  • Add chopped onion and minced ginger. Stir for a few seconds.
  • Add shrimps and curry powder. Stir until shrimps are orange.
  • Add washed spinach and milk. Simmer for a few seconds.
  • Salt and pepper to taste.
*I kept the shell of the shrimps intact to add flavor and so that the shrimps will not shrink. The shrimp I used is a local shrimp called Sugpo, it's clean no need for deveining.

FTF: Stir-Fried Pork and Mixed Veggies in Hoisin Sauce


Hoisin Sauce is a famous Chinese dipping sauce. You can actually whip a dish without adding salt and just by using this sauce. It is often used as barbecue sauce and as glaze for certain chicken and pork dishes.
My Hoisin dish is compose of some pork tenderloin bits and mixed veggies like carrots, string beans, spring onions and shiitake mushrooms. You can make your own by using chicken, beef strips or plain vegetables. Aside from the meat and vegetable ingredients, all you'll need for cooking is a wok, chopped onions, garlic (optional), olive oil for stir- frying and the Hoisin Sauce. Mix everything together until cooked then top it on a bowl of hot jasmine rice.
