A healthy way of cooking egg is through poaching. Egg simmered in water, no oil or fat used. Most rice cooker being sold nowadays comes with an egg poacher. If you don't have an egg poacher, the traditional way of cooking it are as follows:
1. Simmer 1-2 cups of water in a small sauce pan.
2. Add 1 tbsp of vinegar. The vinegar coagulates the egg white turning it into a perfectly poached egg.-source-
3. In a bowl, crack egg, then slowly pour it in the simmering water with vinegar.
4. Cook 2-3 minutes.
5. Use slotted spoon to remove cooked egg. Serve immediately.
Poached eggs are commonly used for Eggs Benedict. You can also serve it seasoned with the herb of your choice, ground pepper or cheese. As for me, I like it plain.
