Been Out From My Usual!

3 days is too long for me posting nothing on either this blog and Sweet Nothings. On my post early yesterday at my personal blog, I had a terrible tooth extraction experience over the weekend. I was off the hook for awhile. I'm still recovering from it and I am still having a hard time eating. I did a lot of cooking for the family, but I still can't enjoy every bite and slurp of the dishes I made. I was off the lense for sometime too...
There were plans for some baking and more pasta making this week. If we're (my sister and moi) able to, we will be making some cream puffs, muffins and fettucine pasta!!!

Heaven N' Eggs

First batch are some dishes from a restaurant called Heaven N' Eggs. I haven't visited this resto since last year. We had breakfast at their branch in Eastwood City and here's our meal.

I just received an email from a good friend living in California. She remained single up to this time, and I could see that she is enjoying her life. Every parent I know wants nothing less than the best for their children. They want their children to be happy, healthy, and smart. While every child is different and unique, just as every parent is, there are some things you can do to help to insure your child is the happiest, healthiest, and smartest possible.

Here is a list of the top ten parenting tips you can use to help insure your child's success in life:

Tip 1-- Command Respect, Don't Demand It

One of the foundations of a good relationship with other people is mutual respect. As a parent you should be commanding the respect of your children, through your actions and words, not demanding that they respect you. As your child learns to respect you in this manner, they will also learn to command respect from others, rather than trying to demand it.

Tip 2-- Maintain Healthy Relationships with Others

Whether it is your spouse or your own friends, it is important that you model good relationship behavior for your children. By having strong relationships with your spouse and your friends, you can show your children how to have strong and healthy relationships with you and the other people in their lives.

Tip 3-- Be A Role Model

Who do you want your children to emulate in their lives, a famous sports star or yourself? Parents should always want to be the number one role model for their children. You want to show them right from wrong, and do this through being a role model who they can emulate in their own lives. Show them how you live and how you do the right things in life even when you are challenged.

Tip 4-- Give Unconditional Love and Support

Children are still growing and learning. They will do things at times which you will not approve of, and may not even understand their thinking behind. By always supporting your child with unconditional love, even during the rough times, you can show your child that they will always have your love and support. While you may not approve of their actions, they know that you love them and that you simply do not love the action they took.

Tip 5-- Show Support Though Positive Reinforcement

Never use the words stupid, dumb or other negative words to describe your children. Never tell them they are, or make them feel, less-than. If your children are in school, they will hear enough negativity from the other children when adults are not present. Build them up through positive words at home, so that they will be able to deflect the negative words they hear when you are not with them.

Tip 6-- Eat Smart As A Family

Food habits start from a very young age; what you eat as a child has a lot to do with your eating habits later in life. Start your children off right by offering them whole and healthy foods. If they start eating healthy from a very young age, then they will likely continue to eat well throughout their lives. It is much easier to get children to eat healthy foods if that is the only thing they know.

It is very important for me to share these tips. As a starting parent, I am overwhelmed of how fast my baby grows up into a kid. The tips that I just shared are just some that my husband and I do in the process of raising up our child.

Stick It!

Have a fun afternoon ready for kids coming from a hard day of studying. Greet them with corn dogs and their favorite juice.

What you need:

1 box 500g instant pancake mix (coats 10 to 12 hotdogs

1/2 cup corn meal

1/2 cup cornstarch

3 hotdogs

3 cheese sticks

3 ham wrapped-cheese sticks

3 bacon-wrapped hotdogs

For this recipe, use kiddie favorites like hotdogs and cheese sticks. But we keep in mind the grownups too---for you, there's bacon-wrapped hotdog and ham-wrapped cheese sticks.

How to:

Prepare hotdogs and other fillings by skewering with barbecue sticks.

Prepare hotcake mix according to package directions.

Add corn meal and cornstarch.

Dip a hotdog stick in batter and deep-dry until batter starts to form.

Take out of the oil and dip one more time in the coating mix.

Deep- fry once more.

Remove as soon as batter holds shape.

Cream Puff!

When it comes to dessert, this is one of my favorites. I'm happy that Dulcinea is selling this yummy goodness in bite size.

It cost Php61 for every pack of 8. I remembered on my first Food 101 session way in college, I volunteered to bring some Cream Puffs and do a report about it. The next meeting, I came to class without a single puff on hand. The teacher got mad at me, and what a humiliating experience it was. It's a good thing that I love food! I didn't really cared about my teacher...

My Dream House

One of my family's goals is to be able to have our dream house built. A few years back my husband and I almost purchased a house and a lot. A good friend gave us advises that with houses, we must equip ourselves with great knowledge on the best deals. From the contractor, materials, even paint quality and the workers. It is not a toy house we're building, this is our dream house, the real one. And proper handling comes with it. Ideally, the lady is in- charge of the interior design. I would personally be present and instruct how I wanted my house to be.

Grilled Tuna and Cheese

This is our favorite snack. And perfect for the kids to bring to school.

Grilled cheese can be mixed with your favorite jam or ham. I love serving this with Pink Lemonade.

Basic grilled cheese procedure.

In a pan, melt butter place a slice of bread, cheese on top, add tuna shreds and onions. Cover with another slice of bread. Press sandwich with your frying ladle and turn upside down.

Nutrition and Learning

This part II of my Easy Guide To Kid's Snack entry. Now that I have shared some food healthy for our kids this schoolyear. I would like to share some guidelines on how to achieve this goal. We all know how hard it is for our children to love homecooked and prepared meals, when street food and junk are everywhere around them right?

I am very thankful that my son's school gave some tips for this matter.

What children eat can have implications on their physical and mental growth, as well as their future health. try saying to your child " You are what you eat". This is true for children. Many times they don't feel well or act right because they are not eating proper foods.

Follow these guidelines to help your child eat right and feel and act his/her best:

1. encourage your child to eat a variety of foods from the four food groups like fruits, vegetables, milk, cheese and milk products, breads and cereals. Meat. fish, poultry, eggs and beans.


2. Never force your child to eat, but encourage to try all all food.

3. Offer your child nutritional snacks.

4. Avoid processed foods and serv food close to the natural state as possible.

5. Remember, all things should be in moderation. (watch salt and sugar)

6. Limit fried foodd and food high in cholesterol.

7. Make them drink plenty of water.

8. Don't reward children with sweets.

9. Involve children in the cooking and preparation of food, especially their snacks for school.

*If you eat and sit with your child enjoying a healthy meal, your child will be positive about it too.

Food Trip Friday--- My Sweet Tooth

I'm an official Tootsie Roll Kid! I remember buying this candy at a local sari-sari store some time in the 80's, for 2.00 (php). Now its at 55(php) per 100g and 15.00 per stick.
Just recently, a friend gave us the Vanilla flavor. The vanilla flavor if I'm not mistaken, is only available and released every Spring in the U.S.

Picadillo With Oyster Sauce

Picadillo is a dish mainly consisting of ground beef (sometimes shredded beef or chicken) typically found in Cuba, Mexico, and other Latin American countries. In Mexico it is sometimes used as a filling, such as for tacos, and can be mixed with vegetables. It can also be prepared as a type of stew. This recipe was adapted from our Spanish friends. And it is my husband's favorite.

Especially if I cook it with Oyster Sauce.

This dish is very easy to cook.

What You Will Be Needing:

2 tbsp oyster sauce

1 kilo lean ground meat (pork or beef)

5 cloves garlic (minced)

1 medium onion (chopped)

100g raisins

1 large green bellpepper (chopped into small pieces)

2 large potatoes (chopped into small pieces)

Olive Oil

Salt and Pepper

1/2 cup water

How To:

Saute garlic in olive oil until light brown
Add onions and meat. Stir for a few seconds.
Add Oyster sauce.
Add chopped potatoes. Stir again for a few seconds.
Add 1/2 c water and simmer until meat and potatoes are cooked. Add water is necessary.

Add raisins and bell pepper.
Stir for a few seconds and simmer again for about a minute.
Salt and pepper to taste.

* I prefer boiling the meat ahead and drain before cooking the dish itself. It's heathier and faster.

Las Vegas On My Mind

Aside from food the list of restaurants and abundant line of smorgasbord, I dearly love to experience watching any Las Vegas Shows.
If I'm not mistaken, 2 of our famous artist are known to perform in Las Vegas too. A trip to Las Vegas is noincomplete without watching any of their shows. My sister-in-law and I once talked about it. She lives in the U.S. We both plan to go to Las Vegas and experience the warmth and fun this place gives, when I visit.

I have been very fond watching on T.V. It would be great to be able to watch live. Who wouldn't want that.

Las Vegas Shows provides the finest and the most talented entertainers. And I would love to watch The Phantom. It is one of my favorite musicals.

Food Trip Friday---Ampalaya and Misis Edz

Ampalaya (Bitter Melon) I like it sauted with lots of tomatoes and egg. For the health concious, I learned to prepare it with garlic roasted in olive oil.

Misis Edz Chilli Garlic is the best I have ever tasted! Crunchy garlic with Chilli bits in Soy Bean Oil. It goes well with any Filipino dish. Especially grilled.

Sugar Rush!

On the night of our 5th Wedding Anniversary my husband took home a dozen of Krispy Kreme's amazing donuts. It was the only store open. I appreciated the effort and thought. I prepared a special carbonara and waited for my husband to get home. Then we enjoyed a good meal together.

Kare-kare is another Filipino dish made out of peanut sauce. Usually crushed peanuts or sometimes peanut butter. Mixed vegetables such as: String beans, egg plant, pechay, puso ng saging (banana flower bud).
Stewed oxtail, ox tripe, pork or beef meat as main. Best eaten with shrimp paste.

Oxtail, with the skin on and cut into 2-inch lengths, and ox tripe are boiled until tender. Sometimes pieces of ox feet or shins are added. In some varieties, other types of meat are used, such as pork or (rarely) chicken (there is an instance of one version omitting the meat altogether and using vegetables). When the meat is tender, the soup becomes glutinous and to this is added ground roasted peanuts (or peanut butter), ground roasted glutinous rice to make the soup thicker. Atsuete (annatto) is added to give color. The basic vegetables for kare-kare include young banana flower bud or "heart" (puso ng saging), eggplant, string beans, and Chinese cabbage (pechay). Kare-kare is often served hot with special bagoong alamang (sauteed salted shrimp paste). -source-

Chicken Cordon Bleu

I settled for tomato catsup with this one. Any mayo-based sauce, even salad-dressings will fit this crunchy goodness. I still prefer mayo-garlic sauce.

Chicken Cordon Bleu is a French-inspired poultry dish, although evidence suggests that Chicken Cordon Bleu was actually developed in the United States by chefs imitating other stuffed meat dishes from Europe. The name of the dish is clearly of French origin – Cordon Bleu means “blue ribbon” in French, and in French culinary tradition, the Cordon Bleu is awarded to food or chefs of particularly high quality. -source-

The basic ingredients are chicken, ham, and a cheese. You may use bread crumbs as crust. In which veal is wrapped in ham and cheese then fried.

Mangoes In Cream

Easy, very easy.
Simple dessert I prepared for dinner tonight. Used left over mangoes. I had 3 pieces left. Thought of something better on how to make use of them. A pack of all purpose cream and some sweetners came in handy.

The Mango is an abundant fruit here in the Philippines. Perfect during the summer season from March- up to the rainy month of June.
Best chilled.
